Mango chutney was innovative when Bobby Flay did it in 1978. Foraged mushrooms? Amish chicken? Who gives a shit about who picked the mushrooms or if the people who raised the chicken wear bonnets?
Wasabi-crusted salmon with orange-ginger coulis: Unless it's bread, pizza, or pie, it shouldn't have a crust.
Cruelty-free Berkshire pork with shallot reduction and Yukon potato gnocchi: Nobody wants to be cruel, but you did kill the thing—what's cruelty-free about that?

Cayenne pepper-infused, freeze-dried chocolate nuggets bathed in marshmallow-star anise foam: There are maybe two or three decent practitioners of molecular gastronomy in the world, so unless your name is Ferran Adrià, leave the foam on your latte.
Be sure to sample our selection of flavored salts, and please await the water sommelier: A chef who offers anything other than sea salt probably refers to himself in the third person. When the water sommelier comes over, I reach for my gun.

I think the World of Anthony Bourdain, maybe even met him when I worked in NYC but feel he is wrong about crusting. Put a flavored crust on a bass and it gives a compltely different texture and flavor layer that CAN be a winner if applied subtly.

Thank god somebody out there is calling all these 'chefs' out on this kind of crap. Seriously, just give the food to me and let me decide if it tastes worth a damn. I hate truffles, cilantro and foams.
Keep up the excellent work, Mr. Bourdain. You lead and I'll follow, bitching the whole way.

I feel that Mr. Bourdain has been talking out of his ass about Rachael Ray. She is a wonderful person and she doesn't run around smoking and drinking and swearing. Anthony Bourdain is not a role model for any teen not to mention adult. I recently viewed a episode when he was in Brazil and he was drinking, smoking and carousing with some women... what is that? I don't think That's too healthy for kids to watch on TV!!!! I think that the Food Network should take his show off the air...Where did they get this guy? the local back alley in a dumpster? I think that's where this show belongs along with food!!!! He looks like a bum and his show is really boring!!!! Please Food Network take this guy off the air....

You huys are all a bunch of idiots. Rachel Ray has no Culinary experience and Anthony Bourdain has been in the business for twenty some years and knows what he's talking about. Unlike Rachel Ray and her annoying yummo over the top scripted show Anthonys No Reservations teaches you something and he's the sexiest guy on tv. Rachel Ray needs to lose about twenty pounds and stop fucking up her face with surgery
