Cat Cora’s Classics with a Twist: Fresh Takes on Favorite Dishes

Cat Cora is perhaps best known as the first female chef on “Iron Chef” but has also established herself as an accomplished cooking host, a cookbook author and as Executive Chef for Bon Appétit magazine.

We’re not a chef – or even much of a cook – but we love cookbooks so we took it home this weekend to try a recipe. Cat takes classics and gives it a twist, meaning faster to make, lighter and adding fresher ingredients to transform the humdrum into the sometimes spectacular.

All of them looked scrumptious but we went for the seemingly easy “American Tomato Soup with Grilled Cheese Croutons. “

In this case, what makes the dish so yummy is the spices (she adds onion, garlic and jalpaneo ) and uses tomato stock , and  makes grilled cheese croutons which are cheese sandwiches cut into quarters and then quarters again.

Curious what she makes for her family (which includes four boys under the age of six) at the end of a busy day?

She names these six as her go to recipes:

Greek-Style Nachos,
• Grilled Chili-Lime Flank Steak Soft Tacos,
• Crispy Baked Fish Stix with Mustard Dipping Sauce,
• Quick Chicken Curry with Peas, and
• Sour-Cherry-Filled Chocolate Cupcake

Vegas hosted the Bon Appétit Uncork’d this weekend and after all the cooking (and eating!) the party moved on to the Palazzo’s After Hours- Crushed: Wine that Rocks.

Cooking Channel Announces What’s Cooking in 2010

Kicking off the evening’s festivities at 10:00pm was a red carpet with rock star chefs and celebrities, who joked and compared notes. Celebrities and VIPs walking the carpet included: winemaker Joe Bastianich, editor in chief of Bon Appetit Barbara Fairchild, actor Chazz Palminteri from A Bronx Tale, actor Rick Faugno of Jersey Boys, actress Laura Prepon of That 70’s Show, Scott Ian of Anthrax, and Six Foot Nurse. The list of star-studded chefs in attendance was incredible as Zach Allen of Carnevino, Vince Chiyuto of Lagasse’s Stadium, Sam DeMarco of FIRST Food & Bar, Frank and Carla Pellegrino of Rao’s, Luciano Pellegrini of Valentino.

New Riot House Restaurant

Food faddies, chefs and celebs mingled poolside at the Palazzo where of course there was MORE food, featuring signature bites from the all-star lineup at The Palazzo, including Bangin’ Mini’s from First Food and Bar Executive Chef Sam DeMarco, salumi and cheese from Executive Chef Zach Allen of Carnevino, and a Rockin' Wing Bar from Chef de Cuisine Vince Chiyuto of Lagasse's Stadium.

We may never eat again.
